The improvement of tea product quality and enhancement of tea sector’s competitiveness via reduction in processing cost are among the key objectives of the project. And this is critical to increase the added value generated for all players, including farmers, in Vietnam. <o:p></o:p></p><p class=MsoNormal style='mso-margin-top-alt:.1in;margin-right:44.55pt;margin-bottom:0in;margin-left:.6in;margin-bottom:.0001pt'>To date, various training sessions on processing techniques at factory level have been provided under assistance of the project. However, to follow such techniques, certain level of experience of the factory’s in-charge personnel on the visibility of the outputs at different processing stages and application of some traditional rules of thumbs are required. Relying on human senses for technical judgment on quality means that (a) the output quality cannot be consistent, (b) potential waste of cost due to overuse of power inputs, (c) difficulty to improve quality scientifically, and (e) heavily dependent on the availability of experienced individuals – unfavorable changes in personal mood is likely translated into lower quality of output. Cho đến nay, Dự án đã triển khai khá đầy đủ các hỗ trợ đào tạo trong quy trình sản xuất và chế biến chè đen và xanh tại các nhà máy. Tuy nhiên, trên thực tế các nhà máy chế biến ở vùng dự án đang áp dụng công nghệ chế biến chè truyền thống, trong đó hầu hết thông số kỹ thuật trong các khâu chế biến được đo lường và xác định bằng cảm quan và kinh nghiệm. Điều này dẫn đến chất lượng sản phẩm đầu ra không đồng nhất. Mặt khác, nâng cao chất lượng sản phẩm sẽ chỉ có thể đạt được sau khi đội ngũ vận hành đã tích lũy đủ nhiều năm kinh nghiêm –</span><span style='color:#003399'> </span><span lang=VI style='color:#003399'>điều này khó thực hiện được trên thực tế vì hầu hết cán bộ tại các nhà máy còn khá trẻ.
